His cuisine got inspired by his global experiences and modern techniques. Vicky makes use of the local ingredients in his dishes. Vicky has had an experience of fourteen years in cruise ships. He has done four cooking shows for NDTV such as Gourmet Central, Do it Sweet, Vicky goes Foreign, and Vicky goes veg. Currently, Vicky is the Culinary Director for Ever stone Capital, and also operates Harry Bar’s operations in India.

The forty-nine-year-old started his journey in Mumbai where he was born. He enrolled in the Institute of Hotel Management and Catering Technology in Mumbai. He enjoyed cooking and got into it completely. At IHM he got training at the Oberoi and Leela; this was the time he decided to travel and gain experience.

At 22, he got graduated from IHM and earned a job at Costa Cruises. In the ship, he worked with the prestigious Cunard and Helming. With most of his time traveling, Vicky learned the Italian style of cooking and also trained under celebrity chef Todd English. He worked for long hours at the cruise and learned a lot of things. After gaining enough experience, Vicky returned to India and joined Aurus and Nido as a consulting chef.

He brought molecular gastronomy and new techniques of cooking to Mumbai. The culinary styles included cooking in vacuum bags and sous vide. In 2013, Vicky published a cutting-edge cookbook named Vicky Goes Veg. He also spread his cooking ideas through television and hosted the cooking show on NDTV with the same name.

His book won the Best Vegetarian Cook Book Gourmand Award in 2015. In the same year, Vicky got named as the Best Indian Chef. Later, he started a show on Zee named as Vikypedia. The renowned chef is a food lover at heart. The trinity of his cuisines is his exotic style with a blend of local ingredients. Vicky is married to Shina Ratnani and lives in Mumbai.
